The day before Winter!!!!!

Hi everyone! Just thought I'd share with you my latest desserts to salivate your taste buds. Working almost everyday of this month and an accident with my phone drowning in coconut sorbet mix has delayed such tasty treats for the eyes!

The feeling of Winter has crept up and I see a massive demand for people's favourite, such as the..


Sticky date pudding with vanilla butterscotch sauce and coffee ice cream

Finally choosing the perfected recipe, I have gained 2 kilos in the process. It is such a satisfying dish, I might have one when I get to work!


Set coconut tapioca with caramelised banana and jasmine ice cream

I'm sorry to see the banana fritters go, but welcome back the coconut tapioca!!! This smooth velvety spoonful (or should I say spoonfuls) is a beautiful cleanser at the end of the meal!! It is accompanied by the fragrant jasmine tea leaves infused ice cream and crunchy sesame cashew nut praline.


Prune and cognac creme brulee with walnut biscotti and fresh pomegranite

As a sweet special for the last 2 weeks, this creamy delight was delicious!! Many great comments were received and I'm sorry to see it go, but it has been replaced with something devine with chocolate and caramel (pictures to come..).


Lemon souffle with Coconut sorbet and meringue

This little tangy dish here is just a beautiful combination. It was inspired for my craving of lemon meringue pie! Coconut sorbet was my variation. It works well!!


Strawberries and cream macarons

Our supplier had given us a box of strawberries for free and then jam was created. I made vanilla macarons filled with strawberry buttercream, using the homemade jam. Yummy!!

2 big slabs were actually made for the sweet bites because it was just that damn good!

This is the new sweet bite starting today! I'm very excited! And..yes..I'm going to have that also when I go to work soon. You can come and enjoy it too if you visit! =)

The last month of Autumn..

Hey guys! I hope you are all having a great day!!! This weather we are having is wicked..I shall soak up that sun as soon as I post this!!!

In the next couple of weeks, the dessert menu is changing to warm the souls from the damn cold weather!!! I'm very excited!!! But this weeks Spiced apple crumble tartlet has proven successful and will be the first to pop onto the menu!! yay!!


Spiced apple crumble tartlet, poached rhubarb and ginger ice cream

I have been craving apple pie for some time now and this is the result of my crazy cravings! Buttery sweet pastry filled with granny smith apples cooked in cinnamon, ground ginger, pepper and thyme. Warm oat crumble to cover the top. Soft poached rhubarb and lighty infused ginger ice cream with crystallised ginger bits. It was so delicious I made a bigger tart for my family!!


It was amazing!!! I totally satisfied my cravings and took it to another level...I had a tea party..


Family tea party!!

Everyone brought a dish and we had Lychee port jelly, apricot jelly and green apple coconut jelly. We also had baked New York cheesecake, chocolate truffles, warm and gooey Clarins pot cheese, kabana, and 4 different types of teas. Chrysanthemum, Jasmine and Buddha's tea.


The last is called the Mate. It is a tea mixture infused with hot water and drunk from this particular container through a metal straw which has a filter on the end. It is a popular tea which is drunk in South America. It is slightly bitter.


I was craving scones and decided to make scones... with jam and cream..


..but it wasn't enough so I made chocolate brownie for the sweet bite, but staff at Coda got to eat the off cuts... and quince bread and butter pudding..hehe...


... then it became a CODA tea party!!! With mini lamb brioche burgers to balance all the sugar!!!

But what started all these cravings..was the day before ANZAC! Lest we forget! Since CODA has opened, I have always made ANZAC cookies throughout the year when I have spare time. They just taste so good and everyone loves them!!!

Everyone at CODA had the time to reflect on memories of our families, friends and people who fought for our country. We spent time to be happy to celebrate with a tea party and be happy on this present day.

But getting back to showing you CODA's desserts.. there is only one more which is the souffle.

This is the best souffle I have done in my career at CODA. I believe so anyway.. but if you have eaten at CODA, and think otherwise.. tell me..which was your favourite flavour?
